  • 1 tablespoon Olive oil
  • 1 pound Ground beef 90/10
  • 1 small Yellow onion, diced
  • ¾ teaspoon Salt
  • ¼ teaspoon Ground black pepper
  • 4 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 24 ounces Marinara sauce
  • 1 ½ tablespoons Italian seasoning
  • 6 cups Low-sodium chicken broth Add more later if needed to thin out the soup
  • 8 sheets Lasagna noodles, broken into 6ths
  • 2 tablespoons Fresh parsley, chopped Plus more for garnish
  • 1 cup Shredded mozzarella cheese
  • ½ cup Shredded parmesan cheese
  • 8 ounces Ricotta cheese
  • to taste Fresh basil leaves for garnish

Instructions
 

  • Step 1: In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the ground beef. Cook it, breaking it apart with a spoon, until it’s browned and no longer pink, about 5-7 minutes. Drain any excess fat if necessary.
  • Step 2: Add the diced yellow onion, salt, and black pepper. Sauté for about 3-4 minutes or until the onion becomes translucent. Stir in the minced garlic and cook for another minute until fragrant.
  • Step 3: Add the tomato paste to the pot and mix it well with the beef and onions. Stir in the marinara sauce along with the Italian seasoning.
  • Step 4: Pour in the chicken broth and bring everything to a gentle boil. Once boiling, carefully add the broken lasagna noodles. Allow the soup to simmer for about 10-15 minutes, or until the noodles are tender. If the soup seems a bit thick, add more chicken broth.
  • Step 5: Once the noodles are cooked, remove the pot from the heat. Stir in the fresh parsley, shredded mozzarella, shredded parmesan, and ricotta cheese until everything is nicely combined and creamy.
  • Step 6: Ladle the lasagna soup into bowls and top each serving with fresh basil leaves and extra parsley for garnish. Optionally, sprinkle more shredded cheese on top.

Notes

For a richer flavor, use a mix of ground beef and ground sausage. If you prefer a vegetarian version, swap out the meat for your favorite veggies or plant-based protein. Feel free to add additional vegetables like spinach, zucchini, or bell peppers for extra nutrition.
