Leftover Chicken Quesadillas

These Leftover Chicken Quesadillas are quick, delicious, and a fantastic way to transform leftover chicken into a satisfying meal!

Ingredients
  

  • 4 8-10 inch flour tortillas
  • 1.5 cups shredded cooked chicken
  • 1 cup shredded cheddar or Monterey jack cheese I used cheddar
  • 1/4 cup sour cream or cream cheese
  • 1 teaspoon garlic powder
  • 1/4 cup chopped cilantro
  • salt and pepper to taste

Instructions
 

Step 1: Prepare the Filling

  • In a mixing bowl, combine the shredded cooked chicken, cheese, sour cream or cream cheese, garlic powder, chopped cilantro, and salt and pepper. Mix until everything is well combined and creamy.

Step 2: Heat the Skillet

  • Place your skillet over medium heat and let it warm up. You can add a little oil or butter if you like, but it’s not necessary if using a non-stick skillet.

Step 3: Assemble the Quesadillas

  • Take one flour tortilla and place a generous amount of the chicken filling on one half. Fold the other half over the filling to create a half-moon shape. Repeat for remaining tortillas.

Step 4: Cook the Quesadillas

  • Place the quesadillas in the heated skillet. Cook for 2-3 minutes on each side until golden brown and crispy. Flip gently with a spatula.

Step 5: Serve and Enjoy!

  • Remove the cooked quesadillas from the skillet and let cool for a minute. Slice into wedges and serve with salsa, guacamole, or extra sour cream.

Notes

  • Use whole wheat tortillas or low-fat cheese for a healthier version.
  • Add extra veggies like bell peppers or spinach for more nutrition.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
