  • 1 teaspoon ground pepper freshly ground

Lemon Thyme Dressing

  • Begin by assembling all the ingredients on your countertop: fresh lemon, garlic, olive oil, dried thyme, salt, and pepper.
  • Cut the lemon in half and use a juicer or your hand to extract the juice into a measuring cup. Ensure there are no seeds in the juice.
  • In a mixing bowl, combine the lemon juice, minced garlic, dried thyme, and ground pepper. Stir gently to combine.
  • Slowly drizzle in the extra virgin olive oil while whisking continuously to emulsify the dressing, creating a smooth and cohesive mixture.
  • Add salt to taste, adjusting the seasoning based on your preference. Give it one final whisk to incorporate everything.
  • If you’re not using the dressing immediately, pour it into a jar or an airtight container. Store in the refrigerator for up to a week.

Notes

  • Use fresh lemon juice for the brightest flavor.
  • Substitute dried thyme with fresh thyme using three times the amount for a fresher taste.
