Instructions
Step 1: In a mixing bowl, combine the full-fat coconut milk, maple syrup, and lime juice. Stir until well combined.
Step 2: Blend the cubed mango until smooth. You can use a blender or an immersion blender.
Step 3: Pour about 2 tablespoons of the coconut milk mixture into each popsicle mold, then add a layer of blended mango.
Step 4: Add a handful of raspberries into each mold on top of the mango layer.
Step 5: Pour more of the coconut milk mixture into each mold, filling them to the top. Swirl the layers together for a marbled effect.
Step 6: Insert popsicle sticks and freeze for at least 4 to 6 hours, or until completely solid.
Notes
For the smoothest popsicles, ensure the mango is well blended. Adjust sweetness with more or less maple syrup as desired.
