  • 1.5 pounds boneless skinless chicken, cut into 1-inch pieces
  • 10 ounces penne pasta
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 tablespoon olive oil
  • 3 tablespoon butter
  • 2 teaspoon garlic, minced
  • 3 tablespoon flour
  • 2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 cup sun-dried tomatoes, drained
  • 1 teaspoon paprika
  • 2 teaspoon dried Italian seasoning
  • Fresh basil for garnish

Instructions
 

  • 1. Cook the penne pasta according to package instructions. Drain and set aside.
  • 2. Cut the chicken into 1-inch bite-sized pieces and season with salt and pepper.
  • 3. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-8 minutes until fully cooked.
  • 4. Transfer the chicken to a plate and set aside.
  • 5. In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant. Add flour and stir to create a paste.
  • 6. Whisk in chicken broth, heavy cream, and parmesan cheese.
  • 7. Stir in sun-dried tomatoes, paprika, and Italian seasoning. Adjust seasoning with salt and pepper as needed.
  • 8. Simmer the sauce for a few minutes until thickened.
  • 9. Return chicken and pasta to the skillet, stirring to coat everything in the sauce.
  • 10. Garnish with fresh basil and additional parmesan cheese before serving.
