  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 large russet potato, peeled and diced into ½ inch cubes
  • 1-2 jalapeños, seeded and finely diced or green bell pepper if you don’t like heat
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • ½ teaspoon ground coriander
  • 1 cup tomato sauce
  • 1.5 cups beef broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish, optional

Instructions
 

  • Step 1: Heat the olive oil in a large skillet over medium heat.
  • Step 2: Add the diced yellow onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.
  • Step 3: Add the ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Step 4: Add the diced russet potato and jalapeños (or green bell pepper). Stir and cook for about 5 minutes.
  • Step 5: Sprinkle in the ground cumin, Mexican oregano, and ground coriander. Stir well and cook for another 2-3 minutes.
  • Step 6: Add the tomato sauce and beef broth. Stir and season with salt and pepper.
  • Step 7: Bring to a gentle simmer, reduce heat to low, cover, and let simmer for about 25-30 minutes.
  • Step 8: Taste and adjust seasoning if needed. Garnish with chopped fresh cilantro before serving.

Notes

For added flavor, consider using a mixture of ground beef and ground pork. You can also add chopped olives or raisins for a sweet contrast.
