  • 1-2 medium Jalapeños Adjust based on spice preference
  • 0.5 medium Yellow Onion Diced
  • 1 clove Garlic Minced
  • 0.25 cup Fresh Cilantro Leaves Packed
  • 1-2 tablespoons Fresh Lime Juice Optional for extra zest
  • 0.5 teaspoon Salt

Instructions
 

  • Step 1: Prepare the Tomatillos - Remove the husks from the tomatillos and rinse them well under water.
  • Step 2: Roast the Ingredients - Preheat your oven to 425°F (220°C). Arrange the tomatillos and jalapeños on a baking sheet and roast for 15-20 minutes until blistered.
  • Step 3: Blend Everything Together - In a blender, combine the roasted tomatillos, jalapeños, diced onion, minced garlic, cilantro, and salt. Add lime juice if using.
  • Step 4: Blend Until Smooth - Pulse until you reach your desired consistency. Taste and adjust seasoning if needed.
  • Step 5: Chill and Serve - Transfer to a bowl, cover, and chill in the fridge for at least 30 minutes before serving.

Notes

For a smokier flavor, try char grilling the tomatillos and jalapeños. Adjust spice level by removing jalapeño seeds.
