Ingredients
  

For the Cookie Dough:

  • 4 oz Cream Cheese softened to room temperature
  • 1/2 cup Unsalted Butter softened
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 3.9 oz Instant Chocolate Fudge Pudding Mix dry mix, do not prepare
  • 18 oz Brownie Mix e.g., Betty Crocker Delights Supreme Chocolate Chunk
  • 1/2 cup Mint Fudge Baking Chips or Andes Creme De Menthe baking chips
  • 1/2 cup Milk Chocolate Chips
  • 1/2 tsp Peppermint Extract

For the Cream Cheese Frosting:

  • 2 oz Cream Cheese softened
  • 2 tbsp Unsalted Butter softened
  • 1 1/2 cups Powdered Sugar
  • 1 tsp Green Food Coloring optional
  • 1/2 tsp Peppermint Extract
  • 1 tbsp Heavy Cream

Instructions
 

Prepare the Dough

  • In a large mixing bowl, combine the softened cream cheese and butter. Use an electric mixer to cream them together until light and fluffy.
  • Add the large egg and the vanilla extract to the cream cheese mixture. Blend until fully incorporated.
  • Add the instant chocolate fudge pudding mix and the brownie mix to the wet ingredients. Mix until just combined. Be careful not to overmix.
  • Gently fold in the mint fudge baking chips and milk chocolate chips with a spatula, ensuring even distribution.
  • Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.

Bake the Cookies

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  • Bake for 10-12 minutes, or until edges are set but centers are still soft.

Make the Frosting

  • In a medium bowl, beat together the softened cream cheese and butter. Gradually add the powdered sugar, mixing until smooth.
  • If desired, mix in a few drops of green food coloring. Stir in the peppermint extract and heavy cream until the frosting is light and fluffy.

Frost the Cookies

  • Once cookies have cooled completely, frost them generously with the cream cheese frosting using a spatula or piping bag.
  • Top each cookie with additional mint fudge baking chips or chocolate chips for decoration.
