Equipment

  • Mixing Bowls
  • Whisk
  • Baking Sheet
  • Parchment Paper
  • Cooling rack
  • Double boiler or microwave-safe bowl

Ingredients

  • 500 g all-purpose flour or flour 00 provides structure
  • 150 g sugar for sweetness
  • 150 g almond flour adds nutty flavor and moisture
  • 35 g cocoa powder for rich chocolate flavor
  • 2 teaspoons baking powder helps cookies rise
  • 2 teaspoons cinnamon or pisto infuses warmth and spice
  • 1 orange zest and juice
  • 150 g honey natural sweetener
  • 100 ml lukewarm water binds ingredients together
  • 200 g dark chocolate for melting and drizzling

Instructions

  • Start by measuring all your ingredients accurately. This step is crucial for the success of your Mostaccioli Cookies.
  • In a large mixing bowl, combine the all-purpose flour, almond flour, sugar, cocoa powder, baking powder, and cinnamon (or pisto). Whisk together until well blended.
  • In a separate bowl, mix the orange zest and juice, honey, and lukewarm water. Once combined, pour this mixture into the dry ingredients and stir until a dough forms.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Chilling helps the flavors meld together and makes the dough easier to handle.
  • While the dough is chilling, preheat your oven to 180°C (350°F). Prepare your baking sheet with parchment paper.
  • Once chilled, take the dough out and scoop tablespoon-sized portions. Roll them into balls and place them on the prepared baking sheet, leaving some space between each cookie.
  • Bake the cookies in the preheated oven for about 12-15 minutes, or until they are firm to the touch. They may appear slightly soft but will firm up as they cool.
  • While the cookies are baking, melt the dark chocolate using a double boiler or in the microwave in short intervals, stirring until smooth.
  • Once the cookies have cooled on the rack, drizzle the melted chocolate over the top. You can be as artistic as you like!
  • Let the chocolate set for a few minutes, then dive into your delicious Mostaccioli Cookies! They pair wonderfully with a cup of coffee or tea.

Notes

  • Customize the spices by adding nutmeg or cardamom for a unique flavor twist.
  • Substitute honey with maple syrup or agave to make the cookies vegan.
  • Store baked cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months.
