Ingredients
  

  • 1 ball Homemade Whole Wheat Pizza Dough or your favorite store-bought dough
  • 1 tablespoon extra virgin olive oil
  • 8 ounces mixed sliced mushrooms such as baby bella, shiitake, or oyster; avoid white button mushrooms which lack flavor, about 2 cups
  • 0.75 teaspoon kosher salt
  • 1 large clove garlic thinly sliced
  • 1 tablespoon chopped fresh thyme leaves
  • 0.5 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Instructions
 

Prepare Your Dough

  • If you're using homemade whole wheat pizza dough, start by allowing it to come to room temperature if it’s been refrigerated. If you're using store-bought dough, follow the package instructions to prepare it.

Sauté the Mushrooms

  • In a skillet, heat the extra virgin olive oil over medium heat. Add the sliced mixed mushrooms and sprinkle with kosher salt. Sauté for about 5-7 minutes until they are tender and have released their moisture. Add the thinly sliced garlic and chopped fresh thyme, cooking for an additional minute until fragrant. Remove from heat and set aside.

Preheat Oven

  • Preheat your oven to 475°F (245°C) to ensure a crispy crust. If using a pizza stone, place it in the oven while it preheats.

Roll Out the Dough

  • On a lightly floured surface, roll out your prepared pizza dough into a circle or rectangle, depending on your preference. Aim for about ¼ inch thickness for a chewy yet crispy crust.

Assemble the Pizza

  • Transfer the rolled-out dough to a baking sheet or preheated pizza stone. Spread the pizza sauce evenly over the dough, leaving a small border for the crust. Evenly distribute the sautéed mushrooms and garlic mixture over the sauce. Top with shredded mozzarella cheese and finish with a sprinkle of grated Parmesan cheese.

Bake

  • Place the assembled pizza in the preheated oven. Bake for 12-15 minutes or until the crust is golden brown and the cheese is bubbly and slightly browned.

Slice and Serve

  • Once baked, remove the pizza from the oven and let it cool for a couple of minutes. Slice it up with a pizza cutter and serve warm, garnished with extra thyme if desired.

Notes

  • Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
  • Reheat pizza in a preheated oven at 350°F (175°C) for about 10 minutes or in a covered skillet to keep the crust crispy.
