- 1 ball Homemade Whole Wheat Pizza Dough or your favorite store-bought dough
- 1 tablespoon extra virgin olive oil
- 8 ounces mixed sliced mushrooms such as baby bella, shiitake, or oyster; avoid white button mushrooms which lack flavor, about 2 cups
- 0.75 teaspoon kosher salt
- 1 large clove garlic thinly sliced
- 1 tablespoon chopped fresh thyme leaves
- 0.5 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
Prepare Your Dough
If you're using homemade whole wheat pizza dough, start by allowing it to come to room temperature if it’s been refrigerated. If you're using store-bought dough, follow the package instructions to prepare it.
Sauté the Mushrooms
In a skillet, heat the extra virgin olive oil over medium heat. Add the sliced mixed mushrooms and sprinkle with kosher salt. Sauté for about 5-7 minutes until they are tender and have released their moisture. Add the thinly sliced garlic and chopped fresh thyme, cooking for an additional minute until fragrant. Remove from heat and set aside.
Assemble the Pizza
Transfer the rolled-out dough to a baking sheet or preheated pizza stone. Spread the pizza sauce evenly over the dough, leaving a small border for the crust. Evenly distribute the sautéed mushrooms and garlic mixture over the sauce. Top with shredded mozzarella cheese and finish with a sprinkle of grated Parmesan cheese.
- Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
- Reheat pizza in a preheated oven at 350°F (175°C) for about 10 minutes or in a covered skillet to keep the crust crispy.
- Experiment with different cheeses like provolone, gouda, or feta for unique flavors.
