  • 1/2 cup butter cut into 1-tablespoon pieces
  • 1/2 cup unsweetened cocoa powder
  • 2 cups sugar
  • 1/2 cup milk
  • 3 cups quick-cooking oats
  • 1/2 cup creamy peanut butter
  • 1 1/2 teaspoons vanilla extract

No-Bake Chocolate Oatmeal Cookies Made Stepwise

  • In a medium saucepan over medium heat, add the 1/2 cup of butter cut into 1-tablespoon pieces. Allow it to melt completely, stirring occasionally to prevent burning.
  • Once the butter is melted, whisk in the 1/2 cup of unsweetened cocoa powder and 2 cups of sugar. Stir until the mixture is smooth and well combined.
  • Pour in the 1/2 cup of milk and continue to stir until everything is fully incorporated. Bring the mixture to a gentle boil, stirring frequently.
  • Once boiling, remove the saucepan from the heat. Allow it to cool for a minute before moving on to the next step.
  • Stir in the 3 cups of quick-cooking oats, 1/2 cup of creamy peanut butter, and 1 1/2 teaspoons of vanilla extract. Mix until all the oats are well coated and the peanut butter is fully integrated.
  • Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Shape them into cookies, as they will hold their shape once set.
  • Allow the cookies to cool at room temperature for about 30 minutes, or until they are firm enough to hold their shape.

Notes

  • Use almond butter or sunflower seed butter as a nut-free alternative to peanut butter.
