- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1 tsp vanilla extract
- 1 cup old-fashioned oats raw
- 2/3 cup toasted, sweetened shredded coconut
- 1/2 cup ground golden flaxseed meal
- 6 tbsp chocolate chips
In your mixing bowl, add the creamy peanut butter, honey, and vanilla extract. Stir these together until smooth and well combined.
Add the old-fashioned oats, toasted shredded coconut, ground flaxseed meal, and chocolate chips to the wet ingredients. Gently fold everything together until evenly coated and sticky but manageable.
Place your bowl in the refrigerator for about 15-20 minutes to firm up the mixture slightly.
Once chilled, scoop out small portions (about a tablespoon each) and roll them into bite-sized balls. Place each ball on a baking sheet or plate lined with parchment paper or a silicone mat.
Pop the tray back into the refrigerator for a minimum of 30 minutes to let the energy bites fully firm up. Then transfer them into an airtight container for storage.
