No Bake Energy Bites

Ingredients
  

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1 cup old-fashioned oats raw
  • 2/3 cup toasted, sweetened shredded coconut
  • 1/2 cup ground golden flaxseed meal
  • 6 tbsp chocolate chips

Instructions
 

  • In your mixing bowl, add the creamy peanut butter, honey, and vanilla extract. Stir these together until smooth and well combined.
  • Add the old-fashioned oats, toasted shredded coconut, ground flaxseed meal, and chocolate chips to the wet ingredients. Gently fold everything together until evenly coated and sticky but manageable.
  • Place your bowl in the refrigerator for about 15-20 minutes to firm up the mixture slightly.
  • Once chilled, scoop out small portions (about a tablespoon each) and roll them into bite-sized balls. Place each ball on a baking sheet or plate lined with parchment paper or a silicone mat.
  • Pop the tray back into the refrigerator for a minimum of 30 minutes to let the energy bites fully firm up. Then transfer them into an airtight container for storage.

Notes

  • Store energy bites in an airtight container in the refrigerator for up to one week.
  • Freeze bites for up to three months; thaw before eating for 10-15 minutes.
  • Customize by swapping chocolate chips for dried fruit or adding spices like cinnamon or nutmeg.
