Ingredients
  

  • 2/3 cup un-popped popcorn kernels
  • 2 cups granulated sugar
  • 2/3 cup half and half
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 6 drops red food coloring (or any other color you'd like)

Instructions
 

Step 1: Pop the Popcorn

  • Start by popping the popcorn kernels using a large pot on the stove or a popcorn maker. If using a pot, add a tablespoon of oil, heat over medium heat, then add kernels. Cover and shake occasionally until popping slows. Transfer popped popcorn to a large mixing bowl, removing un-popped kernels.

Step 2: Prepare the Sweet Coating

  • In a medium saucepan, combine granulated sugar, half and half, light corn syrup, and salt. Heat over medium, stirring gently until sugar dissolves. Bring to a gentle boil and boil without stirring for about 5 minutes, watching carefully to prevent burning.

Step 3: Add Flavor and Color

  • Remove saucepan from heat, then stir in vanilla extract and red food coloring, adjusting amount to desired pink shade.

Step 4: Coat the Popcorn

  • Quickly pour the sweet mixture over the popcorn in the mixing bowl. Gently toss with a spatula or wooden spoon until evenly coated.

Step 5: Cool and Serve

  • Spread coated popcorn onto a baking sheet lined with parchment paper. Allow to cool completely (about 30 minutes). Break apart clumps and serve or package for gifting.
