Ingredients
  

  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup fresh orange segments peeled and pith removed
  • 0.5 cup sliced almonds toasted for extra flavor
  • 0.5 cup shredded carrots
  • 0.25 cup chopped fresh mint leaves
  • 0.5 cup crumbled feta cheese
  • 0.33 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • salt and freshly ground black pepper to taste

Instructions
 

  • Start by peeling your oranges carefully, removing all the white pith to avoid bitterness. Segment the orange by cutting between the membranes to release clean, juicy pieces. Set these aside.
  • In a dry skillet over medium heat, toast the sliced almonds until they turn golden brown and release a nutty aroma. Stir frequently to prevent burning, about 3 to 5 minutes.
  • In a large salad bowl, combine the mixed greens, shredded carrots, chopped fresh mint, and crumbled feta cheese. Toss gently to mix evenly.
  • In a small bowl or jar, whisk together the olive oil, honey, apple cider vinegar, salt, and freshly ground black pepper until the dressing is emulsified and smooth.
  • Add the prepared orange segments and toasted almonds to the salad bowl. Pour the dressing over the salad and toss gently to coat all ingredients. Serve immediately.
