Pasta Puttanesca Recipe: Step-by-Step Guide

  • In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for about 1 minute until fragrant.
  • Stir in the diced Fresno pepper and chopped anchovy fillets. Cook for an additional 2-3 minutes, allowing the anchovies to melt into the oil and the pepper to soften.
  • Add the capers and the crushed tomatoes to the skillet. Stir well to combine. Season with sea salt and pepper, then let the sauce simmer for about 10-15 minutes, stirring occasionally.
  • Once the sauce has thickened slightly, add the drained spaghetti to the skillet. Toss to coat the pasta in the sauce, adding reserved pasta water as needed to achieve the desired consistency.
  • Fold in the sliced olives and minced parsley. Taste and adjust seasoning if necessary.
