Add the 1 1/2 pounds of bite-sized chicken pieces and cook, stirring occasionally, until browned and cooked through, about 6–8 minutes.
Meanwhile, whisk together 1/4 cup creamy peanut butter, 1 tablespoon soy sauce, 1 tablespoon honey, 2 minced garlic cloves, 1 teaspoon grated fresh ginger, 1/4 teaspoon red pepper flakes, 1/2 cup chicken broth, and 1 tablespoon lime juice in a bowl until smooth.
Pour the peanut sauce over the cooked chicken in the skillet, reduce heat to medium, and simmer for about 5 minutes, stirring occasionally, until the sauce is heated and slightly thickened.
Serve the peanut chicken over steamed rice and garnish with 1/4 cup chopped cilantro and 1/4 cup chopped peanuts.
