Total Time 35 minutes mins
- 1 lb beef steak thinly sliced
- 1 tablespoon olive oil
- 1 onion thinly sliced
- 1 bell pepper thinly sliced
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup provolone cheese shredded
- 1 cup mozzarella cheese shredded
- Turkey bacon cooked and chopped (optional)
Cook the Beef
Push the cooked onions and peppers to the side of the skillet and add the thinly sliced beef steak. Season with salt and pepper to taste. Cook the beef until it’s browned and cooked through, usually around 5 to 7 minutes. Stir occasionally to ensure even cooking and to mix the beef with the vegetables.
Combine and Melt the Cheese
Assemble the Roll Ups
Lay out your flour tortillas on a clean surface. Evenly distribute the beef, peppers, onions, and cheese mixture across the tortillas. If you’re using turkey bacon, sprinkle the chopped pieces over the filling for an added smoky crunch. Carefully roll up each tortilla tightly, tucking in the sides as you go to keep the filling secure.
- Use thinly sliced beef steak for tender, quick cooking.
- Don’t skip melting the cheese in the skillet; it helps keep the filling moist and together.
- Reheat leftovers in a skillet to maintain the crispiness of the tortillas.
- Try swapping beef for chicken or lamb for different flavors.
- Add jalapeños or mushrooms for extra texture and spice.
