Ingredients
  

  • 1 lb beef steak thinly sliced
  • 1 tablespoon olive oil
  • 1 onion thinly sliced
  • 1 bell pepper thinly sliced
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup provolone cheese shredded
  • 1 cup mozzarella cheese shredded
  • Turkey bacon cooked and chopped (optional)

Instructions
 

Prepare the Vegetables

  • Start by heating the olive oil in a large skillet over medium heat. Add the thinly sliced onions and bell peppers. Sauté them until they’re soft and slightly caramelized, about 8 minutes.

Cook the Beef

  • Push the cooked onions and peppers to the side of the skillet and add the thinly sliced beef steak. Season with salt and pepper to taste. Cook the beef until it’s browned and cooked through, usually around 5 to 7 minutes. Stir occasionally to ensure even cooking and to mix the beef with the vegetables.

Combine and Melt the Cheese

  • Once the beef and veggies are cooked, reduce the heat to low. Sprinkle the shredded provolone and mozzarella cheese evenly over the mixture in the skillet. Cover with a lid and let the cheese melt for about 2 to 3 minutes.

Assemble the Roll Ups

  • Lay out your flour tortillas on a clean surface. Evenly distribute the beef, peppers, onions, and cheese mixture across the tortillas. If you’re using turkey bacon, sprinkle the chopped pieces over the filling for an added smoky crunch. Carefully roll up each tortilla tightly, tucking in the sides as you go to keep the filling secure.

Heat the Roll Ups

  • For a crispy exterior and to help seal the roll ups, place them seam-side down on a clean skillet or griddle over medium heat. Cook for 2 to 3 minutes on each side until the tortillas are golden brown and slightly crisp.

Serve

  • Slice the roll ups in half if desired and serve warm. They pair wonderfully with a side of ketchup, mustard, or your favorite dipping sauce.
