Pickle Cookies
These Pickle Cookies are a unique sweet and savory treat, combining crunchy Ritz crackers, tangy pickle chips, and creamy Colby Jack cheese.

- 20 Ritz crackers
- 20 hamburger pickle chips
- 5 slices Colby Jack cheese
Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Take one Ritz cracker and place a slice of Colby Jack cheese on top. Cut the cheese into smaller pieces if desired.
Place a hamburger pickle chip on top of the cheese and gently press down.
Add another Ritz cracker on top of the pickle to create a sandwich. Repeat until all cookies are assembled.
Bake the assembled cookies on the prepared baking sheet for 10-12 minutes, until cheese is melted and crackers are golden brown.
Remove from oven and let cool for a few minutes. Serve warm.
