Instructions
Preheat the oven to 375°F (190°C).
Arrange the chicken breasts on a rimmed baking sheet or in a large ovenproof skillet in a single layer.
Drizzle the chicken with the 2 teaspoons olive oil and rub lightly to coat each piece.
Bake the chicken until the internal temperature reaches 165°F (74°C) and juices run clear, about 20–30 minutes depending on thickness; check with a meat thermometer.
Remove the chicken from the oven and spread Southern pimento cheese evenly over each breast.
Return to the oven and bake just until the cheese is melted and warmed through, about 8–10 minutes.
Let the chicken rest a few minutes before serving.
Notes
Use a meat thermometer to ensure chicken reaches 165°F.
Adjust baking time for thicker or thinner breasts.
Spread cheese evenly for consistent melting.
Leftover pimento cheese can be used elsewhere if you have extra.
