Pimento Cheese Chicken Recipe

  • rimmed baking sheet or large ovenproof skillet

Ingredients
  

  • 2 teaspoons olive oil
  • 4-6 boneless skinless chicken breasts
  • Southern pimento cheese enough to spread on top of chicken (see linked recipe)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Arrange the chicken breasts on a rimmed baking sheet or in a large ovenproof skillet in a single layer.
  • Drizzle the chicken with the 2 teaspoons olive oil and rub lightly to coat each piece.
  • Bake the chicken until the internal temperature reaches 165°F (74°C) and juices run clear, about 20–30 minutes depending on thickness; check with a meat thermometer.
  • Remove the chicken from the oven and spread Southern pimento cheese evenly over each breast.
  • Return to the oven and bake just until the cheese is melted and warmed through, about 8–10 minutes.
  • Let the chicken rest a few minutes before serving.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F.
  • Adjust baking time for thicker or thinner breasts.
  • Spread cheese evenly for consistent melting.
  • Leftover pimento cheese can be used elsewhere if you have extra.
