Ingredients
  

  • 4 large mushroom caps fresh, firm
  • 4 tablespoons pizza sauce store-bought or homemade
  • 8-12 slices pepperoni adjust amount as preferred
  • 1/4 cup grated Monterey Jack cheese melts beautifully for a gooey topping

Instructions
 

  • Preheat your oven to 375°F (190°C) to ensure even baking and a lovely golden color.
  • Gently clean the mushroom caps with a damp cloth and carefully remove the stems. Optionally, chop the stems finely to mix into the filling.
  • In a small mixing bowl, combine pizza sauce, chopped pepperoni, grated Monterey Jack cheese, and chopped mushroom stems if using.
  • Using a spoon, generously fill each mushroom cap with the pizza filling mixture.
  • Place the stuffed mushrooms on a baking sheet lined with aluminum foil if desired, and bake for 15-20 minutes until tender and cheese is melted and bubbly.
  • Remove from oven, let cool for a minute, then serve and enjoy as an appetizer or snack!

Notes

  • You can prepare the stuffed mushrooms up to 24 hours in advance and refrigerate before baking.
  • Freeze unbaked stuffed mushrooms for up to 2 months; bake directly from frozen, adding 5-10 minutes to bake time.
