Ingredients
  

  • 2 cups water main liquid needed to cook the quinoa
  • 1 cup quinoa providing protein and fiber
  • dash salt optional, enhances flavor
  • dash olive oil optional, adds richness and flavor

Instructions
 

  • Measure out 1 cup of quinoa and 2 cups of water. Have salt and olive oil ready if using.
  • Rinse the quinoa under cold water for about 30 seconds to remove the natural coating called saponin.
  • Combine the rinsed quinoa and 2 cups of water in a microwave-safe bowl. Add a dash of salt and a drizzle of olive oil if desired.
  • Cover the bowl with plastic wrap or a microwave-safe lid to trap steam.
  • Microwave on high for 6 to 8 minutes, starting with 6 minutes and checking for doneness.
  • Let the bowl sit covered for about 5 minutes to absorb remaining water and fluff up.
  • Remove cover and fluff the quinoa gently with a fork. Serve as a side or incorporate into recipes.

Notes

  • Always rinse quinoa before cooking to remove bitterness.
  • Adjust microwave time based on your appliance's wattage for best results.
  • Store leftovers in an airtight container in the fridge for up to 5 days or freeze for longer storage.
