- 2 cups water main liquid needed to cook the quinoa
- 1 cup quinoa providing protein and fiber

Measure out 1 cup of quinoa and 2 cups of water. Have salt and olive oil ready if using.
Rinse the quinoa under cold water for about 30 seconds to remove the natural coating called saponin.
Combine the rinsed quinoa and 2 cups of water in a microwave-safe bowl. Add a dash of salt and a drizzle of olive oil if desired.
Cover the bowl with plastic wrap or a microwave-safe lid to trap steam.
Microwave on high for 6 to 8 minutes, starting with 6 minutes and checking for doneness.
Let the bowl sit covered for about 5 minutes to absorb remaining water and fluff up.
Remove cover and fluff the quinoa gently with a fork. Serve as a side or incorporate into recipes.
