  • yellow paste food coloring for coloring batter
  • orange paste food coloring for coloring batter

Whipped Cream Frosting

  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar sweetens the frosting
  • 1/2 teaspoon vanilla extract adds flavor

Instructions

Cake Preparation

  • Preheat your oven to 350°F (175°C). Prepare the white cake mix according to package instructions.
  • Divide the batter evenly into six bowls.
  • Add different paste food coloring to each bowl: purple, blue, green, yellow, orange, and red; mix well.
  • Grease and flour 9-inch round cake pans. Pour each colored batter into the pans, filling halfway.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let layers cool in pans for 10 minutes, then transfer to a cooling rack.

Whipped Cream Frosting

  • In a clean bowl, combine heavy whipping cream, powdered sugar, and vanilla extract.
  • Using an electric mixer, whip the cream until stiff peaks form, about 3-5 minutes.

Assembly

  • Place the purple cake layer on a serving plate and spread a layer of whipped cream frosting on top.
  • Stack layers in rainbow order: blue, green, yellow, orange, and red, frosting between each layer.
  • Frost the top and sides with remaining whipped cream. Smooth with an offset spatula.
  • Chill the cake in the refrigerator for at least 30 minutes before slicing and serving.

Notes

  • Use gel or paste food coloring for the brightest, most vibrant layers.
  • Do not overmix the cake batter to keep the cake light and fluffy.
  • Ensure cake layers are completely cool before frosting to prevent melting.
  • Store the cake in an airtight container in the refrigerator for up to 4 days.
  • Freeze wrapped cake layers up to 2 months; thaw overnight in the fridge before serving.
