Ingredients
  

Cream Cheese Filling

  • 8 ounces cream cheese, softened at room temperature
  • ½ cup powdered sugar
  • ¼ teaspoon pure vanilla extract

Cookie Dough

  • 1 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tablespoon red food coloring liquid or gel
  • ½ teaspoon baking soda

Instructions
 

  • Step 1: Prepare the Cream Cheese Filling. In a mixing bowl, add the softened cream cheese, powdered sugar, and vanilla extract. Whip them together until the mixture is smooth and creamy. Place the mixture in the refrigerator to chill.
  • Step 2: Mix the Dry Ingredients. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, salt, and baking soda.
  • Step 3: Make the Cookie Dough. In a large mixing bowl, cream together the granulated sugar and egg until light and fluffy. Mix in the red food coloring. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  • Step 4: Assemble the Cookies. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Take about a tablespoon of cookie dough, flatten it, place a small amount of the chilled cream cheese filling in the center, and wrap the dough around it to form a ball.
  • Step 5: Bake. Place the cookies onto the prepared baking sheet, spacing them about two inches apart. Bake for 12-15 minutes, or until the edges are set and the tops look soft but not wet.
