Ingredients
  

  • 8 oz Challenge Cream Cheese at room temperature
  • 1/2 cup butter at room temperature
  • 1 large egg
  • 1 box red velvet cake mix
  • 1 1/2 cups chopped chocolate and cream cookies

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the room temperature Challenge Cream Cheese and butter. Using an electric mixer, beat them together until the mixture is light and fluffy, about 2-3 minutes.
  • Crack the large egg into the bowl and mix until fully incorporated.
  • Gradually add the box of red velvet cake mix to the cream cheese mixture. Mix on low speed until just combined, being careful not to overmix.
  • Gently fold in the 1 1/2 cups of chopped chocolate and cream cookies.
  • Using a cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until edges are set but centers are still soft. They will firm up as they cool.
  • Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  • Do not overbake; cookies should look slightly underbaked for gooey texture.
