Ingredients
  

  • 8 cups plain popcorn air-popped
  • Fine salt to taste
  • 1/2 cup honey
  • 1/3 cup granulated sugar
  • 1/2 cup natural peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk chocolate chips melted
  • 1 1/2 cups Mini Reese's Peanut Butter Cups chopped

Instructions
 

Step 1: Air-Pop the Popcorn

  • Start by air-popping your popcorn. You can use an air popper or simply pop kernels in a pot with a lid. Once popped, place the popcorn in a large mixing bowl and season lightly with fine salt.

Step 2: Prepare the Peanut Butter Mixture

  • In a medium saucepan over low heat, combine the honey, granulated sugar, and natural peanut butter. Stir continuously until the mixture is smooth and well combined, about 3-4 minutes. Remove from heat and stir in the vanilla extract.

Step 3: Combine Popcorn and Peanut Butter Mixture

  • Pour the warm peanut butter mixture over the popcorn in the large mixing bowl. Using a spatula, gently fold the mixture into the popcorn until evenly coated. Be careful not to crush the popcorn!

Step 4: Add the Chocolate

  • Melt the milk chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between until smooth. Drizzle the melted chocolate over the popcorn, folding gently with a spatula.

Step 5: Incorporate Mini Reese's Peanut Butter Cups

  • Fold in the chopped Mini Reese's Peanut Butter Cups, ensuring they are evenly distributed throughout the popcorn.

Step 6: Spread and Cool

  • Line a baking sheet with parchment paper and spread the popcorn mixture out in an even layer. Allow it to cool for about 30 minutes to set and firm up.

Step 7: Break and Serve

  • Once cooled, break the popcorn into clusters and serve! Best enjoyed fresh but can be stored for later munching.

  • Use maple syrup or agave nectar as a vegan substitute for honey.
