  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon olive oil
  • Salt to taste

  • Red pepper flakes optional
  • 1 teaspoon fresh lemon juice about
  • Fresh cilantro for garnish

Instructions
 

  • Start by slicing your ripe avocado in half. Remove the pit and scoop the flesh into a bowl. Add a pinch of salt, black pepper, and a teaspoon of fresh lemon juice. Mash the avocado with a fork until creamy but slightly chunky. Set aside.
  • Place the two slices of whole grain bread in a toaster or under a broiler until golden brown and crisp.
  • Heat the tablespoon of olive oil in a non-stick skillet over medium heat. Crack the eggs into the pan and fry until the whites are set but yolks remain slightly runny, about 2 to 3 minutes. For fully cooked yolks, flip and cook an additional minute. Season with salt and black pepper.
  • Spread the mashed avocado evenly over the toasted bread slices. Place one fried egg on top of each slice. Sprinkle red pepper flakes if desired. Finish with fresh cilantro leaves.
  • Serve immediately while warm for the best flavor and texture.
