- 2 steaks salmon 1-inch thick, about 6 ounces each
- 3/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 1/2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 tablespoon fresh lemon juice juice of 1/2 lemon
- 1 teaspoon minced garlic
Pat the salmon steaks dry with paper towels. Season both sides with sea salt and black pepper.
Heat olive oil in a heavy-bottomed skillet over medium-high heat until shimmering but not smoking.
Place salmon steaks in the hot skillet, skin-side down if skin is on. Cook undisturbed for 4-5 minutes to form a golden crust.
Flip the salmon gently using a spatula. Add butter, minced garlic, and lemon juice to the skillet. Baste the salmon with the melted butter and garlic mixture.
Cook salmon on the second side for 3-4 minutes until cooked through and flakes easily. Internal temperature should reach 145°F (63°C).
Remove salmon from skillet and let rest for a minute before serving with your favorite sides.
