Ingredients
  

  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 cup cocoa powder I used Nestle
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips I used Ghirardelli
  • 16 Rolos or caramels
  • 8 teaspoons Nutella
  • Sea salt for topping

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly and achieve that perfect chewy texture.
  • In a large mixing bowl, add 1 cup of unsalted butter and 1 cup of packed brown sugar. Using an electric mixer, cream them together until the mixture is light and fluffy, about 2-3 minutes.
  • Add 2 eggs to the butter and sugar mixture. Beat until well combined and the mixture is smooth.
  • In a separate bowl, whisk together 1 cup cocoa powder, 1 teaspoon baking powder, 1 teaspoon salt, and 2 cups all-purpose flour. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Gently fold in 1 cup of semi-sweet chocolate chips until they are evenly distributed throughout the dough.
  • Using a cookie scoop, take a generous amount of dough and flatten it slightly in your hand. Place a Rolo in the center along with 1 teaspoon of Nutella. Form the dough around the filling, ensuring it is fully enclosed.
  • Place the stuffed cookie dough balls onto a baking sheet lined with parchment paper, leaving enough space between each cookie to allow for spreading.
  • Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft. Remove from the oven and allow them to cool for a few minutes.
  • While the cookies are still warm, sprinkle a pinch of sea salt on top of each cookie for that perfect finishing touch.

Notes

  • Make sure your butter is at room temperature for easier mixing.
  • Chilling the dough for 30 minutes can enhance the flavors and improve the texture.
  • These cookies can be frozen before baking; add a few extra minutes to the baking time if baking from frozen.
