Start by gathering all your ingredients and tools. Crack the 2 eggs into a microwave-safe bowl. Add 1 tablespoon of your chosen non-dairy milk and a pinch of salt and pepper.
Using your fork, whisk the eggs and milk until they are fully combined. You want a nice, frothy mixture without any visible egg whites or yolks.
Place the bowl in the microwave and cook on high for 30 seconds. After 30 seconds, carefully remove the bowl (it may be hot!) and stir the eggs with your spatula.
Return the bowl to the microwave and cook for an additional 30 seconds. Stir again. You may need to repeat this step for another 15-30 seconds, depending on your microwave’s wattage and how cooked you like your eggs.
Once the eggs are fluffy and just set, remove them from the microwave. Taste and add more salt and pepper if desired. Serve immediately for the best texture.
