Seafood Lasagna Roll-Ups

Ingredients
  

  • 9 lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat
  • 1/2 cup spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the 9 lasagna noodles and cook according to package instructions until al dente, about 8-10 minutes. Drain and lay noodles flat on parchment or a clean towel to cool.
  • In a large mixing bowl, combine ricotta, mozzarella, and Parmesan cheeses. Add chopped shrimp, crab meat, and chopped spinach. Season with garlic powder, onion powder, dried basil, dried oregano, salt, and pepper. Mix gently until well combined.
  • Preheat oven to 375°F (190°C). Spread olive oil evenly over the bottom of a 9x13-inch baking dish. Lay one noodle flat and spread about 1/9th of the filling along the length, leaving a small border. Roll up the noodle and place seam-side down in baking dish. Repeat with remaining noodles and filling.
  • Pour marinara sauce over the rolled noodles, covering generously. Sprinkle extra mozzarella and Parmesan cheese on top if desired.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly. Let rest 5 minutes before serving.

Notes

  • To avoid noodles sticking together, lay cooked noodles flat separated by parchment or clean towels.
  • Cook noodles just until al dente to prevent mushy roll-ups after baking.
  • Drain excess moisture from seafood and spinach to keep filling firm and avoid sogginess.
  • Cover baking dish with foil during initial baking to ensure even heat distribution and prevent burning.
  • Assemble roll-ups a day ahead and refrigerate for quick dinner prep.
