Ingredients

  • 3 cups shredded cooked chicken
  • 1/3 cup favorite hot sauce
  • 3 1/2 oz. fat-free cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions chopped
  • 1/2 cup all-purpose flour you won’t use all of it
  • 3 cups Corn Flakes cereal crushed

Instructions

Make Skinny Buffalo Chicken Bites: A Simple Method

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the shredded chicken, hot sauce, softened cream cheese, shredded cheddar cheese, and chopped green onions. Mix well until everything is evenly incorporated.
  • In separate bowls, place the all-purpose flour, beaten eggs, and crushed Corn Flakes. This will be your breading station.
  • Using your hands, take a small amount of the chicken mixture and shape it into bite-sized balls about 1 inch in diameter.
  • Roll each chicken bite in the all-purpose flour first, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it in the crushed Corn Flakes, pressing gently to adhere.
  • Place the breaded chicken bites on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.
  • Once baked, remove from the oven and let them cool for a few minutes. Serve with extra hot sauce or your favorite dipping sauce and enjoy your delicious Skinny Buffalo Chicken Bites!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
  • For a gluten-free version, substitute all-purpose flour and Corn Flakes with gluten-free alternatives.
  • Adjust the amount of hot sauce to your preferred spice level for milder or spicier bites.
  • Try adding garlic powder, onion powder, or fresh herbs to customize the flavor.
