- 1 pound ground beef choose lean for less grease
- 1 tablespoon olive oil
- 1 small onion diced
- 1 bell pepper diced (any color you prefer)
- 2 cloves garlic minced
- 1 cup tomato sauce
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- to taste salt and pepper
- 4 large tortillas flour tortillas work best for grilling
- 1 cup shredded cheese cheddar or a Mexican blend are ideal
- Turkey bacon cooked and crumbled (optional)
Cook the Ground Beef and Veggies
Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper, cooking until softened and fragrant—about 3 to 4 minutes. Stir in the minced garlic and sauté for another 30 seconds, making sure not to burn it.
Add the ground beef to the skillet, breaking it up with a spoon. Cook until the meat is browned all over and no longer pink, roughly 6 to 8 minutes. Drain any excess fat if necessary to prevent the filling from becoming greasy.
Add the Sauce and Spices
Stir in the tomato sauce, ketchup, Worcestershire sauce, chili powder, cumin, salt, and pepper. Mix well to combine all ingredients. Reduce the heat to low and let the mixture simmer gently for 10 minutes. This allows the flavors to meld and the sauce to thicken to a perfect sloppy joe consistency.
Assemble the Burritos
Lay each tortilla flat and spoon a generous amount of the sloppy joe filling down the center. Sprinkle shredded cheese over the filling, and if using, add the crumbled turkey bacon for an extra layer of flavor and crunch.
Fold in the sides of the tortilla, then roll it up tightly from the bottom to form a burrito.
- Warm tortillas before rolling to prevent cracking and make folding easier.
- Drain excess fat from cooked beef to avoid soggy burritos.
- For a vegetarian version, substitute ground beef with lentils or crumbled tofu.
- Store leftovers in an airtight container in the fridge for up to 3 days; reheat wrapped in a damp paper towel.
- Add jalapeños or hot sauce for a spicy kick.
