Ingredients
  

  • 1 medium onion chopped
  • 1 cup Uncle Ben's Brown Rice
  • 14 oz vegetable broth canned
  • 1 tsp Greek Seasoning
  • 0.5 tsp Spike Seasoning
  • 0.5 tsp dill weed
  • 3 cups zucchini diced cubes
  • 1 red bell pepper chopped
  • 6 oz Feta crumbled

Instructions
 

  • Begin by gathering all your ingredients. Chop the onion, dice the zucchini, and chop the red bell pepper.
  • In your slow cooker, combine the chopped onion, Uncle Ben's brown rice, vegetable broth, Greek seasoning, Spike seasoning, and dill weed. Stir to combine.
  • Add the diced zucchini and chopped red bell pepper to the slow cooker. Give everything a good stir to ensure all the ingredients are well mixed.
  • Cover the slow cooker and set it on low for 4-6 hours or on high for 2-3 hours. The rice should be tender and have absorbed all the liquid when done.
  • Once the rice and veggies are cooked, sprinkle the crumbled feta over the top. Stir gently to combine, allowing the feta to melt slightly into the warm mixture.
  • Scoop the Slow Cooker Brown Rice (with Veggies and Feta) into bowls and enjoy this hearty dish as a main course or side.
