Slow Cooker Chicken Gyros

Ingredients
  

  • 1/2 onion small
  • 3 cloves garlic minced
  • 2 pounds ground chicken
  • 2 eggs whisked
  • 1/2 cup whole-wheat breadcrumbs plain
  • 1 lemon juiced and zested
  • 1 teaspoon dried thyme
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons salt
  • 1 tablespoon extra virgin olive oil
  • 12 whole-wheat naan bread or pita bread rounds 6 inch
  • 1 tomato chopped
  • 1 cucumber sliced
  • 1/2 cup Greek yogurt low-fat, plain
  • 1 lemon cut into wedges

Instructions
 

  • In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, whisked eggs, whole-wheat breadcrumbs, lemon juice and zest, dried thyme, cinnamon, nutmeg, and salt. Mix until well combined.
  • Form the mixture into small patties or meatballs to help them hold their shape while cooking.
  • Optional: Heat olive oil in a skillet over medium heat and sear the chicken patties for 3-4 minutes on each side until golden brown for added flavor.
  • Place the chicken patties in the slow cooker. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until cooked through and tender.
  • While the chicken cooks, chop tomato, slice cucumber, and prepare Greek yogurt sauce by mixing yogurt with lemon juice and a pinch of salt if desired.
  • When the chicken is done, remove from slow cooker and let rest for a few minutes. Warm naan or pita bread, then layer chicken, chopped tomatoes, sliced cucumbers, and Greek yogurt. Squeeze fresh lemon juice over and serve.

Notes

  • For extra flavor, sear the patties before slow cooking.
  • Use ground turkey or lamb as a substitute for chicken.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
  • Don’t overcrowd the slow cooker; cook in batches if needed.
  • Let the chicken rest before slicing to keep it juicy.
