Vegetables

  • 6 large Bell Peppers Sliced into thick strips (about 8 cups sliced)
  • 1 large Sweet Onion Sliced into thick strips (about 2 cups sliced)
  • 2 cloves Garlic Minced

Seasonings

  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • 0.25 teaspoon Cracked Black Pepper

Main Ingredients

  • 2 pounds Italian Sausage About 10 medium-sized sausages
  • 22 ounces Jarred Marinara Sauce

Garnish

  • to taste Fresh Parsley Chopped, optional for garnish

Instructions
 

  • Step 1: Prepare the Vegetables - Wash and slice the bell peppers and onion into thick strips. Mince the garlic.
  • Step 2: Season the Veggies - In your slow cooker, add the sliced bell peppers and onions. Sprinkle in the minced garlic, Italian seasoning, dried basil, salt, and cracked black pepper. Toss gently to coat.
  • Step 3: Add the Sausage - Lay the Italian sausage on top of the vegetables without cutting them.
  • Step 4: Pour in the Marinara Sauce - Pour the marinara sauce over the sausage and vegetables, ensuring everything is covered.
  • Step 5: Slow Cook - Cover the slow cooker and set it to low heat for 6 to 8 hours or high heat for 3 to 4 hours.
  • Step 6: Serve and Enjoy - Remove the sausage links, slice them, stir everything together, and serve hot, garnished with parsley if desired.

Notes

For an extra kick, add red pepper flakes. Substitute turkey or chicken sausage for a lighter option. Prepare vegetables the night before for quicker prep.
