Place the 32 ounces frozen tater tots (one bag) into the crock of a large slow cooker.
Sprinkle the tater tots with 1 Old El Paso Taco Seasoning Packet and toss gently in the crock until the tots are evenly coated.
Cover the slow cooker and cook on LOW for 4–5 hours or on HIGH for 2–3 hours.
Every hour, lift the lid and stir the tots gently so pieces from the top move to the bottom and all tots get some time against the heated surface.
When the tater tots are hot and slightly crispy to your liking, switch the slow cooker to the WARM setting.
If using chopped chicken or taco meat, add it to the slow cooker now so it warms through.
Sprinkle low-fat shredded cheese over the tots in the crock and replace the lid for a few minutes until the cheese melts.
Add any additional toppings you like from the ingredient list—black beans, salsa, low-fat sour cream, scallions, cilantro, avocado, guacamole, and/or red onion—either spread over the tots in the slow cooker or serve on the side for guests to add themselves.
Serve the tater tots warm directly from the slow cooker.
