  • 1.5 pounds Fresh spinach or 2 pounds frozen spinach
  • 6 tablespoons Olive oil divided
  • 1 large Yellow onion diced
  • 0.25 cup Green onions sliced
  • 0.25 cup Fresh dill chopped
  • 0.25 cup Fresh parsley chopped
  • 2 cloves Garlic minced
  • 3 large Eggs
  • 0.5 cup Sour cream
  • 0.5 cup Feta cheese crumbled
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 16 ounces Filo pastry package
  • 1 large Egg beaten with 2 tablespoons water for egg wash
  • Black and white sesame seeds optional

Instructions
 

  • Step 1: Prepare the Spinach. If using fresh spinach, rinse it well under cold water, remove tough stems, and roughly chop the leaves. If using frozen spinach, ensure it’s fully thawed and squeeze out excess water.
  • Step 2: Sauté the Aromatics. In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add diced onion and sauté for about 5 minutes until soft. Stir in green onions and garlic, sauté for another 1-2 minutes.
  • Step 3: Add the Spinach and Herbs. Add chopped spinach to the skillet and cook for 3-5 minutes until wilted. Remove from heat and stir in dill and parsley.
  • Step 4: Make the Filling. In a mixing bowl, whisk together eggs, sour cream, feta, salt, and pepper. Add sautéed spinach mixture and mix until well combined.
  • Step 5: Prepare the Filo Pastry. Preheat oven to 375°F (190°C). Cover filo sheets with a damp towel. Brush one sheet with olive oil, layer another on top, and repeat until you have about 5 sheets layered.
  • Step 6: Assemble the Spanakopita. Scoop about 1 cup of filling into the center of layered filo. Fold sides over filling and roll up tightly. Place seam-side down on a baking sheet lined with parchment paper.
  • Step 7: Bake to Perfection. Brush tops with egg wash and sprinkle with sesame seeds if desired. Bake for 30-35 minutes until golden brown and crispy.
  • Step 8: Serve and Enjoy! Let cool for a few minutes, slice into squares or triangles, and serve warm.

Notes

Extra tips: Properly drain spinach to avoid sogginess. Experiment with herbs like mint or oregano. You can prep the filling a day in advance.
