Start by prepping all your ingredients. Dice the onion, mince the garlic, slice the bell peppers, and cut the broccoli into florets. Slice the spicy jalapeno chicken sausage into 1/2 inch pieces.
In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat until hot.
Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.
Add the sliced spicy jalapeno chicken sausage to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and heated through.
Toss in the sliced red, orange, and yellow bell peppers along with the broccoli florets. Stir well to combine.
Drain the can of Rotel tomatoes and add them to the skillet. Stir in the Mrs. Dash onion and herb blend, red pepper flakes, and a pinch of sea salt. Mix thoroughly.
Cook the mixture for an additional 5-7 minutes until the vegetables are tender but still crisp, stirring occasionally.
Remove the skillet from heat. Serve the Spicy Sausage and Veggie Stir Fry hot, alone or over rice or quinoa.
