Spicy Sausage and Veggie Stir Fry

Ingredients
  

  • 1 onion diced
  • 1 clove garlic minced
  • 1 Tbsp olive oil
  • 4 links spicy jalapeno chicken sausage cut into 1/2 inch slices
  • 1 red bell pepper de-seeded and sliced
  • 1 orange bell pepper de-seeded and sliced
  • 1 yellow bell pepper de-seeded and sliced
  • 1 large head broccoli cut into florets
  • 10 oz Rotel tomatoes canned, drained
  • 1 tsp Mrs. Dash onion and herb blend
  • 1/4 tsp red pepper flakes
  • pinch sea salt

Instructions
 

  • Start by prepping all your ingredients. Dice the onion, mince the garlic, slice the bell peppers, and cut the broccoli into florets. Slice the spicy jalapeno chicken sausage into 1/2 inch pieces.
  • In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat until hot.
  • Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.
  • Add the sliced spicy jalapeno chicken sausage to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and heated through.
  • Toss in the sliced red, orange, and yellow bell peppers along with the broccoli florets. Stir well to combine.
  • Drain the can of Rotel tomatoes and add them to the skillet. Stir in the Mrs. Dash onion and herb blend, red pepper flakes, and a pinch of sea salt. Mix thoroughly.
  • Cook the mixture for an additional 5-7 minutes until the vegetables are tender but still crisp, stirring occasionally.
  • Remove the skillet from heat. Serve the Spicy Sausage and Veggie Stir Fry hot, alone or over rice or quinoa.

Notes

  • Adjust spice level by using milder sausage or reducing red pepper flakes as desired.
  • Substitute vegetables seasonally, such as snap peas in spring or kale in winter.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage.
