Ingredients
  

  • 8 oz fettuccine pasta
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp red pepper flakes
  • salt and pepper to taste
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Preheat your oven to 400°F (200°C). Peel the garlic cloves and place them in a small baking dish. Drizzle with a little olive oil, cover the dish with foil, and roast for about 20 minutes or until soft and golden.
  • Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining.
  • While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the peeled and deveined shrimp, sprinkle with salt, pepper, and half of the red pepper flakes, and cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove from the pan and set aside.
  • In the same skillet, add the minced fresh garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and add the roasted garlic cloves, mashing them gently with a spoon to incorporate. Let the cream simmer gently for 3-4 minutes, stirring frequently.
  • Reduce the heat to low and stir in the grated Parmesan cheese until melted and the sauce thickens. Add the remaining red pepper flakes and adjust salt and pepper to taste. If the sauce is too thick, stir in a splash of the reserved pasta water until you reach your desired consistency.
  • Add the cooked fettuccine and sautéed shrimp back into the skillet. Toss everything together until the pasta is thoroughly coated with the spicy roasted garlic Alfredo sauce. Let it warm through for a minute or two.
  • Transfer the pasta to serving plates or a large bowl. Sprinkle with chopped fresh parsley for a vibrant finish. Serve immediately.
