Ingredients
  

  • 1 pound beef steak cut into bite-sized pieces
  • 8 ounces pasta any type you prefer
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • Parmesan cheese grated (optional) for serving

Instructions
 

Step 1: Prepare the Pasta

  • Start by bringing a large pot of salted water to a boil. Add your preferred pasta and cook it according to the package instructions until al dente. Once cooked, drain the pasta, reserving about ½ cup of the pasta water, and set it aside.

Step 2: Sear the Steak Bites

  • While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Pat the steak pieces dry with a paper towel and season them generously with salt, pepper, and dried oregano. Add the steak bites to the hot skillet in a single layer. Avoid overcrowding the pan to ensure they sear properly. Cook the steak bites for 2-3 minutes on each side or until they reach your desired level of doneness. Remove the steak from the skillet and set aside.

Step 3: Sauté Garlic and Vegetables

  • In the same skillet, add the remaining tablespoon of olive oil. Toss in the minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they soften and begin to release their juices. Then, add the spinach leaves and cook until just wilted, about 1-2 minutes.

Step 4: Combine Everything

  • Return the steak bites to the skillet with the vegetables. Toss in the cooked pasta and add a splash of the reserved pasta water to help everything come together. Stir well to combine and warm through, seasoning with additional salt and pepper if needed.

Step 5: Serve

  • Divide the Steak Bites And Pasta among plates and sprinkle with freshly grated Parmesan cheese if desired. Serve immediately and enjoy!
