Total Time 30 minutes mins
- 1 pound beef steak cut into bite-sized pieces
- 8 ounces pasta any type you prefer
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup cherry tomatoes halved
- 1 cup spinach leaves
- 1 teaspoon dried oregano
- salt and pepper to taste
- Parmesan cheese grated (optional) for serving
Step 1: Prepare the Pasta
Start by bringing a large pot of salted water to a boil. Add your preferred pasta and cook it according to the package instructions until al dente. Once cooked, drain the pasta, reserving about ½ cup of the pasta water, and set it aside.
Step 2: Sear the Steak Bites
While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Pat the steak pieces dry with a paper towel and season them generously with salt, pepper, and dried oregano. Add the steak bites to the hot skillet in a single layer. Avoid overcrowding the pan to ensure they sear properly. Cook the steak bites for 2-3 minutes on each side or until they reach your desired level of doneness. Remove the steak from the skillet and set aside.
Step 3: Sauté Garlic and Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Toss in the minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they soften and begin to release their juices. Then, add the spinach leaves and cook until just wilted, about 1-2 minutes.
Step 4: Combine Everything
- Do not overcrowd the pan when searing steak bites to ensure proper browning and juicy meat.
- Dry steak pieces thoroughly before cooking to avoid steaming instead of searing.
- Cook pasta to al dente for the best texture that holds up when tossed with steak and veggies.
- Omit Parmesan cheese or use dairy-free alternatives to make this dish dairy-free.
- Store leftovers in an airtight container in the fridge for up to 3 days; reheat with a splash of water or broth to keep pasta moist.
