Ingredients
  

Fresh Strawberries

  • 3 cups fresh strawberries, quartered

Dairy Ingredients

  • ¾ cup sour cream
  • ¼ cup whole milk
  • 4 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ¾ cup salted butter, at room temperature
  • 9-10 drops pink food color (optional)

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • Step 2: In a large mixing bowl, beat the room temperature butter until light and fluffy. Gradually add the granulated sugar, mixing well. Add eggs one at a time, then mix in vanilla extract, sour cream, and whole milk until creamy.
  • Step 3: In another bowl, sift together the flour, baking powder, and baking soda. Gradually add to the wet mixture, mixing gently until just combined. Add pink food coloring if desired.
  • Step 4: Fold in the quartered strawberries gently with a spatula.
  • Step 5: Divide the batter between the prepared pans and bake for 25-30 minutes. Check for doneness with a toothpick.
  • Step 6: For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and mix until fluffy. Adjust with milk if needed.
  • Step 7: Once cakes are cool, assemble by placing one layer on a plate, spreading frosting on top, and adding the second layer. Frost the sides and top.
  • Step 8: Chill the cake in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4-5 days. You can freeze slices for up to 3 months.
