Ingredients
  

Streusel Topping

  • 1 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter melted

Cake Batter

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

Preparation

  • Preheat your oven to 350°F (175°C). Grease your 9x13-inch baking pan with butter or non-stick spray to ensure easy removal of the cake later.

Make the Streusel Topping

  • In a mixing bowl, combine 1 cup of packed brown sugar, 1/4 cup of all-purpose flour, and 2 teaspoons of ground cinnamon. Pour in the melted butter and stir until the mixture resembles coarse crumbs. Set aside.

Prepare the Cake Batter

  • In a large mixing bowl, whisk together 3 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt. Make sure all dry ingredients are evenly combined.
  • In another bowl, mix 1/2 cup of melted unsalted butter, 1 1/2 cups of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract. Whisk until smooth. Gradually add the milk and mix until combined.
  • Pour the wet mixture into the dry ingredients, stirring gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

Assemble and Bake

  • Pour half of the cake batter into the prepared baking pan and spread it evenly. Sprinkle half of the streusel topping over the batter. Pour the remaining batter on top and finish with the remaining streusel topping.
  • Place the pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.

Cool and Serve

  • Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a cooling rack to cool completely. Slice and serve with your favorite coffee or tea!

Notes

  • For a vegan version, substitute eggs with flax eggs and use plant-based butter and milk.
  • Add chopped nuts like walnuts or pecans to the streusel topping for added crunch and flavor.
  • Store the cooled cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Reheat individual slices in the microwave for 15-20 seconds for a warm treat.
  • Be careful not to overmix the batter to keep the cake tender and light.
