Ingredients
  

  • 1/2 cup almond butter raw, creamy
  • 1/2 cup hemp hearts
  • 2 tablespoons chia seeds
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup maple syrup or raw honey
  • 1 teaspoon vanilla extract
  • 1/4 cup cacao nibs or chopped dark chocolate
  • 1/4 cup raw cacao powder

Instructions
 

  • Begin by gathering all your ingredients.
  • In a mixing bowl, combine the hemp hearts, chia seeds, coconut flakes, cacao nibs, and cacao powder. Stir until well mixed.
  • In another bowl, mix together the almond butter, maple syrup (or honey), and vanilla extract. Stir until smooth and well combined.
  • Pour the wet mixture into the bowl of dry ingredients. Use a spatula to combine everything thoroughly until all the dry ingredients are coated.
  • Cover the bowl with plastic wrap and place it in the refrigerator for about 15-20 minutes.
  • Once chilled, remove the mixture from the refrigerator. Use your hands to form small balls, about 1 inch in diameter, and place them on a parchment-lined tray.
  • Place the tray back in the refrigerator and let the bites chill for at least another 30 minutes to firm up.
  • Once firm, transfer the Superfood Chia Energy Bites to an airtight container. Store in the refrigerator for up to a week or freeze for longer storage.
