Ingredients
  

Dressing

  • 1 cup ranch dressing
  • 2 tablespoons taco seasoning
  • ½ lime juiced

Salad Base

  • 4 cups mixed greens such as romaine, spinach, or spring mix
  • 1 cup cherry tomatoes halved
  • 1 cup black beans rinsed and drained
  • 1 cup corn fresh or canned
  • 1 whole avocado diced
  • ½ cup red onion thinly sliced
  • ½ cup cheddar cheese shredded (or plant-based cheese alternative)

Garnish

  • cilantro for garnish (optional)

Instructions
 

  • Step 1: In a small bowl, combine ranch dressing, taco seasoning, and lime juice. Stir well until blended.
  • Step 2: Rinse mixed greens and chop them into bite-sized pieces. Halve cherry tomatoes, rinse and drain black beans, and prepare corn.
  • Step 3: In a large salad bowl, layer mixed greens as the base, followed by black beans, corn, cherry tomatoes, and diced avocado. Toss gently to combine.
  • Step 4: Sprinkle shredded cheddar cheese and thinly sliced red onion on top.
  • Step 5: Drizzle the dressing over the salad and toss to combine.
  • Step 6: Garnish with cilantro if desired and serve immediately, or chill before serving.

Notes

For a spicy kick, add jalapeños. You can also experiment with proteins like grilled chicken or tofu.
