  • 12 oz penne pasta uncooked
  • 1 lb ground beef 85% lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes undrained
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup sour cream
  • 1/4 cup beef broth low-sodium recommended

Preparation

  • Bring a large pot of salted water to a boil. Add 12 oz of penne pasta and cook until al dente, about 10-11 minutes. Drain and set aside.
  • In a large skillet over medium-high heat, brown 1 lb of ground beef for 6-8 minutes. Drain excess fat if needed.
  • Add 1 chopped medium onion and 2 cloves minced garlic to the skillet. Cook until onion is translucent, about 3-4 minutes.
  • Pour in 1 can (15 oz) tomato sauce and 1 can (14.5 oz) diced tomatoes with their juice. Stir in 2 tsp Italian seasoning, 1 tsp salt, and 1/2 tsp black pepper. Add 1/4 cup beef broth. Simmer for 5-7 minutes.
  • Turn off heat and stir in 1/4 cup sour cream. Add cooked penne pasta and mix gently to coat evenly.
  • Preheat oven to 350°F (175°C). Transfer mixture to a greased 9x13 inch casserole dish. Sprinkle 2 cups shredded cheddar and 1 cup shredded mozzarella cheese evenly on top.
  • Bake for 20-25 minutes until cheese is bubbly and golden. Let sit 5 minutes before serving.

Notes

  • For a spicy twist, substitute or add pepper jack cheese.
  • Add diced vegetables like bell peppers or mushrooms while sautéing for extra nutrition.
  • Use fusilli or rigatoni pasta if penne is unavailable.
  • Stir in cream cheese or ricotta before baking for a creamier texture.
  • Garnish with fresh parsley or basil to brighten the dish.
