Plastic wrap (optional)
- 8 slices deli turkey thin, fat-free, sulfate and nitrate-free options recommended
- 1/4 cup basil pesto fresh and flavorful spread
- 1/2 avocado pit removed, peeled, and sliced very thin
- 1 cup bean sprouts for crunch and nuttiness
Start by gathering all of your ingredients. Slice the avocado into thin pieces and set aside.
On a flat surface or a large plate, lay out one slice of turkey. Spread about 1 tablespoon of basil pesto evenly over the turkey slice, covering it completely.
Place a few thin slices of avocado on top of the pesto-covered turkey. Arrange them in a single layer for even distribution of flavor.
Add a handful of bean sprouts on top of the avocado slices. This will give your roll-ups a nice crunch.
Starting at one end, carefully roll the turkey slice tightly around the fillings. Make sure to keep everything inside as you roll.
Once rolled, you can slice the roll-up into bite-sized pieces or serve it whole. Repeat the process for the remaining turkey slices.
- Make sure your avocado is ripe for the best flavor and creaminess.
- Feel free to experiment with different types of pesto, like sun-dried tomato or roasted garlic.
- For a spicy kick, add some sliced jalapeños or a sprinkle of red pepper flakes.
- You can use lettuce leaves instead of turkey slices for a low-carb option.
- Store leftovers in an airtight container in the refrigerator for up to one day.
