Caramel Sauce Ingredients

  • 1 cup Granulated Sugar
  • ½ cup Heavy Cream
  • cup Butter cut into 6 pieces
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon Salt

Cheesecake Ingredients

  • 16 oz Cream Cheese at room temperature
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • ½ cup Heavy Cream
  • 1 teaspoon Vanilla Extract

Topping Ingredients

  • ½ cup Chopped Pecans for topping

Instructions
 

  • Step 1: Prepare the Caramel Sauce. In a medium saucepan over medium heat, combine the granulated sugar and a tablespoon of water. Stir gently until the sugar is dissolved, then let it boil without stirring. Once you see a beautiful amber color, remove it from the heat and carefully whisk in the butter pieces, followed by the heavy cream. Stir until smooth and add the salt and vanilla extract. Set aside to cool.
  • Step 2: Make the Cheesecake Mixture. In a mixing bowl, beat together cream cheese until smooth. Slowly add the sugar and beat until well combined. Add the eggs one by one, mixing on low speed after each addition. Pour in the heavy cream and vanilla extract, mixing until well integrated.
  • Step 3: Assemble the Cheesecake. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan. Pour the cheesecake mixture into the prepared pan. Bake for about 50-60 minutes until the edges are set but the center still has a slight jiggle. Turn off the oven and leave the cheesecake inside for another hour.
  • Step 4: Chill and Top with Caramel. After cooling, refrigerate the cheesecake for at least 4 hours. Once chilled, remove from the springform pan and drizzle the cooled caramel sauce over the top. Sprinkle with chopped pecans.

Notes

Make sure your cream cheese is at room temperature for easy mixing. Don’t open the oven door while baking to avoid temperature fluctuations.
