Equipment

  • Large Mixing Bowl
  • 9x13 inch Baking Dish
  • Skillet
  • Wooden Spoon
  • Measuring cups and spoons

Ingredients

  • 1 cup tomato juice adds moisture and a tangy flavor to the beef mixture
  • 3/4 cup oatmeal acts as a binder and adds a healthy touch
  • 1 beaten egg helps to hold the mixture together
  • 1/4 teaspoon onion salt provides a subtle onion flavor
  • 1 teaspoon salt enhances the overall taste of the dish
  • 1/2 teaspoon pepper adds a little kick to the casserole
  • 2 pounds ground beef the star of the dish that brings protein and flavor
  • 1 can Campbell's Cheddar Cheese Soup creates a creamy, cheesy layer
  • 28 ounces tater tots the crispy topping that completes the casserole

Instructions

  • Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for the casserole.
  • In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a wooden spoon as it cooks. This should take about 5-7 minutes.
  • In a large mixing bowl, combine the browned beef, tomato juice, oatmeal, beaten egg, onion salt, salt, and pepper. Mix well until everything is evenly combined.
  • Grease your 9x13 inch baking dish lightly with cooking spray or a bit of oil. Spread the beef mixture evenly in the bottom of the dish.
  • Pour the can of cheddar cheese soup over the beef mixture, spreading it out evenly to cover the beef.
  • Arrange the tater tots on top of the cheese soup, making sure to cover the entire surface. This will create a delightful crispy topping as it bakes.
  • Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the tater tots are golden brown and crispy.
  • Once baked, remove the casserole from the oven and let it cool for a few minutes before serving. This dish is best enjoyed warm and can be garnished with fresh herbs if desired.

Notes

  • Drain excess fat from the ground beef to prevent a soggy casserole.
  • For extra crispy tater tots, broil the casserole for a couple of minutes at the end of baking.
  • Use gluten-free oats and cheese soup to make this recipe gluten-free.
  • Substitute ground beef with lentils or a meat alternative for a vegetarian version.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
