Stepwise Method: Vegan Oatmeal Chocolate Chip Cookies

  • Start by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly and achieve that perfect golden color.
  • In a large mixing bowl, whisk together the vegetable oil, dark brown sugar, granulated sugar, applesauce, and vanilla extract until smooth. If using cinnamon, now is the time to add it in.
  • In another bowl, combine the all-purpose flour, rolled oats, baking soda, and salt. Stir until well mixed.
  • Gradually add the dry ingredient mixture into the wet ingredients. Use a rubber spatula to gently mix until just combined. Be careful not to overmix, as this can result in dense cookies.
  • Fold in the dark chocolate chips, making sure they’re evenly distributed throughout the cookie dough.
  • Using a cookie scoop or two tablespoons, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
