  • 4 large eggs
  • 2 cups milk (480 ml)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup Bisquick baking mix (120 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 small yellow onion, diced
  • 2 cups chopped broccoli florets
  • 1 medium clove garlic, minced
  • 1 cup shredded cheese (cheddar, Swiss, or mozzarella)

Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until they are translucent. Then, add the minced garlic and chopped broccoli florets. Cook for another 5 minutes until the broccoli is tender but still bright green. Remove from heat and set aside.
  • Step 3: In a large mixing bowl, crack the 4 large eggs and whisk them together. Pour in the 2 cups of milk, and add the salt and pepper. Mix well until everything is combined.
  • Step 4: Add the 1 cup of Bisquick baking mix to the egg and milk mixture. Stir until there are no lumps.
  • Step 5: Fold in the sautéed vegetables and 1 cup of shredded cheese into the batter. Mix until well incorporated but be gentle to maintain the airiness.
  • Step 6: Grab a greased pie dish or a 9-inch round baking dish. Pour the mixture into the dish and smooth the top. Bake in your preheated oven for about 35-40 minutes, or until the quiche is set and a toothpick inserted in the center comes out clean.
  • Step 7: Once it’s baked to perfection, let the quiche cool for a few minutes. This makes it easier to cut and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, pop it in the microwave or heat it in the oven until warm.
